Organic Canawa “Baby Quinoa”
This baby version of Quinoa doesn’t have a saponins or protective coating yet this small dark grain has just as much protein and amino acids but with a slightly sweeter taste.
Directions for sprouting:
Soak about 1/3 Cup Organic Canawa seeds in a jar for 2 to 4 hours, drain and rinse the seeds twice a day for 4 days. When the sprouts are about 1 inch long, place them near a window for chlorophyll to develop giving them a vibrant green color.
Directions for stovetop prep:
Place Canawa seeds in a fine mesh colander and rinse under running cold water.
In saucepan, add 1 part quinoa to 2 parts liquid (water or stock).
Bring to boil, reduce heat, cover and simmer for approx. 12 minutes.
Remove from heat and allow to rest for 5 minutes before serving.
